Macedonian pastrmajlija is a traditional savory flatbread topped with seasoned meat and baked until golden. Known for its distinctive oval shape, this dish is especially popular in Macedonia and among Balkan families living abroad.
Pastrmajlija is often associated with the city of Štip, where it has become a local culinary symbol. Although recipes vary between households, the combination of soft dough and flavorful meat remains its defining feature.
Ingredients
For the dough:
- 500 g (4 cups) all-purpose flour
- 300 ml (1¼ cups) lukewarm water
- 7 g (2¼ teaspoons) instant dry yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 tablespoons vegetable oil
For the topping:
- 400 g (14 oz) boneless pork shoulder, cut into small cubes
- 2 tablespoons vegetable oil
- 1 teaspoon salt, or to taste
- ½ teaspoon freshly ground black pepper
- ½ teaspoon sweet paprika (optional)
- 2 tablespoons pork lard or vegetable oil, for finishing
Preparation
1. Prepare the dough. In a large bowl, combine the flour, yeast, sugar and salt. Add lukewarm water and oil, then mix until a soft dough forms. Knead for about 8–10 minutes until smooth.
2. Let the dough rise. Cover the bowl with a clean kitchen towel and leave it in a warm place for approximately one hour, or until doubled in size.
3. Season the meat. Place the pork cubes in a bowl and mix with oil, salt, black pepper and paprika. Refrigerate while the dough rises.
4. Shape the flatbreads. Preheat the oven to 250°C (480°F). Divide the dough into four equal portions. Roll or stretch each portion into an elongated oval, creating slightly raised edges.
5. Add the topping. Distribute the seasoned pork evenly over the dough. Add a little lard or vegetable oil to each flatbread.
6. Bake. Place the pastrmajlija on a preheated baking tray or baking stone. Bake for approximately 15–20 minutes, until the crust is golden and the pork is completely cooked.
7. Serve warm. Remove from the oven and allow to cool briefly. Serve with pickled peppers, fresh salad or yogurt.
A Taste of Macedonia
Pastrmajlija is particularly popular during the colder months, when freshly baked bread and hearty meals are especially welcome.
For Macedonian families living in the United States, preparing pastrmajlija at home is a way to maintain a connection with familiar flavors and family traditions.
While some variations include eggs or different types of meat, the classic version remains a favorite in Macedonian kitchens.
Whether served for lunch or dinner, this traditional Balkan flatbread is best enjoyed fresh from the oven.
