Kachamak is a traditional Macedonian cornmeal dish that has been a breakfast favorite for generations, offering a simple and comforting taste of home. Made with just a few basic ingredients, this warm and creamy dish is especially popular when served with white cheese, kajmak, crispy bacon, or pork cracklings.
For many Macedonians, kachamak brings back memories of family breakfasts, homemade meals, and recipes passed down through generations. It is also familiar across the Balkans, including Serbia, Montenegro, and Bosnia and Herzegovina, where similar cornmeal dishes are prepared with different regional variations.
One of the best things about kachamak is its simplicity. The cornmeal cooks in just a few minutes, while the toppings add richness and flavor. Whether enjoyed as a hearty breakfast or a comforting meal later in the day, it remains a beloved part of traditional Macedonian cuisine.
Ingredients
- 200 g (about 1⅓ cups) cornmeal
- 500 ml (about 2 cups) water
- Salt, to taste
- 50 g (about 2 oz) bacon
- 100 g (about 3.5 oz) firm white cheese
- 2 tablespoons pork cracklings
- 2 tablespoons kajmak or sour cream
Note: Use finely ground cornmeal for a smoother texture. Coarser cornmeal may require additional water and a longer cooking time.
How to Prepare Traditional Macedonian Kachamak
Step 1: Cook the cornmeal
Pour the water into a saucepan, add salt, and bring it to a boil. Gradually add the cornmeal while stirring continuously with a whisk to prevent lumps from forming.
Reduce the heat and cook for approximately five minutes, stirring frequently. Continue cooking over low heat until the mixture becomes thick and creamy. Remove from the heat.
Step 2: Prepare the toppings
Cut the bacon into small pieces and fry it in a pan until crispy. Remove the bacon, then add the pork cracklings to the rendered fat and warm them briefly, making sure they do not burn.
Step 3: Layer and serve
Place a little crumbled white cheese and kajmak or sour cream at the bottom of a serving bowl.
Spoon some of the warm kachamak over the cheese, then add a layer of crispy bacon and pork cracklings.
Repeat the layers, finishing with more crumbled cheese, kajmak or sour cream, bacon, and cracklings.
Serve immediately while warm.
Kachamak can also be enjoyed with yogurt, milk, or simply a generous portion of cheese. Families throughout Macedonia have their own favorite ways of preparing it, making this humble cornmeal dish a lasting part of the country’s culinary heritage.
For Macedonians living abroad, preparing kachamak is an easy way to bring a familiar taste of Macedonia into their kitchens, using ingredients available in many American and Canadian grocery stores.
